All green vegetables provide more or less lutein and β-carotene (both belonging to the group of carotenoids). Vegetables rich in lutein include spinach, lettuce and Brussels sprouts. Also, these three are high in β-carotene along with broccoli and peas.

The most positive results found between the intake of carotenoids and the effective reduction in the risk of developing a degenerative process have been found for lutein (green), zeaxanthene (yellow) and lycopene (red). There is clear evidence that these carotenoids reduce the two most common ophthalmological diseases in the elderly: cataracts and macular degeneration, and can even slow down the progress of these processes once they have started.
